Auntie Marilyn's Butter Brickle

family recipe


2 cups flour
1/2 cup rolled oats
scant 1/2 cup brown sugar
1 cup butter
1 cup pecans
1/2 jar caramel sauce
1 pint vanilla ice-cream

Melt butter - add flour, oats, sugar & pecans. Pat thinly on a large cookie sheet and bake at 400 for 15 minutes. Crumble while hot. Drizzle 1/2 the caramel sauce over crumbs. Spread ice-cream over top. Put remaining crumbs over ice-cream and drizzle remaining caramel. Freeze.

I want to try this but I don't understand the "spread ice cream" part of instructions. Am I supposed to soften the ice cream?

thanks norma :) i scoop it out onto the crumble - and as the crumble is still a little warm it melts a bit - then i spread with a spatula. softening it first would work too! let me know how it turns out!
