52 cookies :: week 14 :: pecan sandies

I am working on a tight deadline this week...

these cookies and a cup of tea are the perfect antidote.

Pecan Sandies

adapted from Last Course

1 c pecans
2 c all-purpose flour
2 sticks unsalted butter, softened
2/3 c confectioners’ sugar
2 tsp vanilla extract
1 tsp salt
1/2 tsp baking powder
2 tblsp turbinado sugar

Preheat the oven to 350 F. Spread the nuts in one layer on a baking sheet and bake until well browned, 10-13 minutes. Transfer the pan to a wire rack to cool.

In a food processor, grind the nuts with 1/4 cup of the flour. Set aside.

Using an electric mixer with paddle attachment, beat butter and sugar until creamy and smooth. Add vanilla and beat well. Sift together the remaining 1 3/4 cups of flour, salt, and baking powder. Add dry ingredients to the dough, mixing until just combined. Stir in nut mixture. Form the dough into a disk, wrap in plastic wrap, and chill for at least 3 hours or overnight.

Preheat the oven to 325 degrees F. Roll the dough between two sheets of wax paper to 3/16 inch thick (a rectangle approximately 10 x 14 inches). Using a sharp knife, cut the dough into squares or triangles, as you wish. I went with approximately 1" squares.. Sprinkle the cookies with the turbinado sugar. Place them 1" apart on ungreased cookie sheets (do not reroll the scraps). Prick the cookies with a fork and bake until pale golden all over, about 10 to 12 minutes. Cool on a wire rack.

K: One reason I like it is because it tastes like oatmeal.

These pecan sandies are so good, warm and crumbly, great with tea; bet they are better with milk. If you could eat the feeling of warm, crumbly sand squishing through your toes you'd have a mouthful of this cookie. Texture, pacific at sunset, smiles on faces, automatic memory. It time for a road trip honey. Xoxoxo


Not sure where the oatmeal and granola references come from. Though logically the pecans. Which I love - and throw in everything...

Oh goodness, I happen to have all the ingredients for these. That could be dangerous. They do look good!
